Chef and cake artist. He got into cake-making and decorating at the young age of 10. A year later, he began taking home economics in while attending Moulsham High School in Chelmsford, England. At 16, he enrolled in the National Bakery School in London. Nick served as the principal wedding cake designer at Woodnutts school in England. After leaving Woodnutts, Nick became an instructor at Mary Ford's Cake Artistry Centre in Bournemouth, England. Over the years, Nick was commissioned to create three cakes for the royal family; Queen Elizabeth's 80th birthday cake, one of the wedding cakes for the wedding of Lady Diana Spencer and Prince Charles, and a christening cake for Prince Harry.

During a visit to the U.S. for an International Cake Exploration Société (ICES) convention, Nick saw that his techniques were very different than those practiced in the United States. Realizing the potential to share his knowledge of royal icing and rolled fondant techniques with American cake decorators, Nicholas set up shop in Atlanta, Georgia, and began teaching classes.

Nicholas, along with his business partner Scott Ewing, founded the Atlanta-based International Sugar Art Collection (ISAC). ISAC was located in Norcross, Georgia, in 1992. It is a retail gallery and school teaching all levels of cake decorating and sugar arts. He was well known for creating botanically correct gum paste flowers and his trademark bright green color scheme. He created numerous instructional videos and wrote 11 books on sugar craft and cake decorating.
