The funeral will be preceded by a visitation from 1 to 5 p.m. Thursday in Sunset Lawn Chapel of the Chimes, 4701 Marysville Blvd.
A rosary is scheduled from 7 to 8:30 p.m. Thursday in the cathedral.
Mr. Chairez, 24, who family members said always wanted to be a police officer, died Sunday, a day after suffering a brain hemorrhage while on duty.
A native of Sacramento, he was raised in West Sacramento and graduated in 1995 from River City High School, where he served as student government president.
He joined the Sacramento Police Department in 1997 as a clerical worker in the fleet management office and attended the police academy earlier this year. After he became a sworn officer in June, he began field training.
Mr. Chairez was one month short of finishing that training when he collapsed Saturday afternoon after he and a training officer made a traffic stop.
He is survived by his fiancee, Rebecca Cisneros of Sacramento; parents, Jess J. Chairez and Theresa Rubalcava Chairez of West Sacramento; grandmother, Delia Rubalcava of Sacramento; sister, Rachelle Dutra of Sacramento; and brothers, John, Jess and Robert, all of Sacramento.
Instead of flowers, the family suggests contributions to the Sacramento Law Enforcement Chaplaincy, 2000 Marconi Ave., Sacramento, CA 95821.
